CoffeeCup has just released a product called "Form Builder". This should be interesting.

It uses a combination of Flash, XML and PHP and CoffeeCup claims that the best part is you don’t have to know any code. Just put in your e-mail address and upload the files!

I’ve been teaching novices how to create web sites for a long time and I always find it difficult to teach the absolute newbie how to create forms. So, if what they claim is true, then this may be a very valuable product for all novice webmasters.
